Sweet and Sour Pork
Yakimeshi (Japanese Fried Rice)
Scramble 2 eggs into small bits, set aside.
Chop celery, green onions, bean sprouts, water chestnuts.
Heat 3T oil in a pan and add all vegetables. Lightly fry, vegetables should remain crisp.
Prep Pork
Cut 1lb of pork into bite-sized pieces. Shrimp also works.
- 2 eggs
- 1/2 cup of flour
- 1/4t salt
Combine into a simple batter. Dip pork in batter, deep fry until well done.
Sauce
Measures based on 1lb of meat.
- 2 slices of orange
- 1/4 cup orange juice
- 1/3 cup vinegar
- 3T soy sauce
- 1T corn starch
- 1/2 cup sugar
Combine dry ingredients, set aside. Warm orange juice, vinegar, orange, soy sauce in a pan on medium-low heat. Add dry ingredients and stir until thick.
Finish
Combine egg with fried rice, mix. Combine fried meat chunks in a bowl with the sauce and scoop over the rice.
Alternate Method
Marinate pork cubes in (per 1lb):
- 1t sugar
- 1t salt
- 2t soy sauce
Break 1 egg over the pork cubes, mix. Roll each piece of meat in cornstarch. When starch is moist, fry each piece in deep fat.
