Lita's Butterscotch Rolls

Ingredients

Dough

  • 1pkg (2t) active dry yeast
  • 1/4c warm water
  • 1/4c white sugar
  • 1/4c butter, melted
  • 1t salt
  • 1c milk, warmed
  • egg, beaten
  • 3 1/2c white flour (divide 2c / 1.5c)

Topping

  • 1/4c light corn syrup or blue agave
  • 1T water
  • 2T butter
  • 1c butterscotch chips

Filling

  • 4T melted butter
  • brown sugar
  • cinnamon
  • fresh nutmeg

Instructions

Mix Dough

In a large bowl, combine sugar, butter, salt, milk.

Add in the yeast, egg, 2c of the flour. Beat well. Gradually add the remaining 1.5c of flour. Cover, let rise in warm place until doubled in bulk (about 1.5hrs).

Prep Topping

Prepare butterscotch topping by combining all ingredients over heat. Can be done in microwave (1-2min) or pan on the stove. If using microwave, use 30second increments and stir with a wire whisk. Spread the topping in a 9x13 pan.

Make Rolls

Once dough has doubled in size, punch down and roll into a 12x8 rectangle. Brush surface with melted butter (~4T). Sprinkle with brown sugar and cinnamon. Grate fresh nutmeg on top as well.

Roll up the flattened dough using the long side. Cut into 12 equal pieces. Place in pan on top of the butterscotch topping. Allow to rise again, 30-40minutes.

Bake & Serve

Bake at 350deg for 30-35 minutes. Let stand for 5 minutes before serving. Flip the pan over onto a dish and serve with butterscotch on top.
