Best Peach Cobbler

Ingredients

  • 2-3 cups frozen sliced peaches in syrup or sweetened fresh
  • 2t grated lemon peel
  • 3T lemon juice
  • 2T quick-cook tapioca
  • 1 1/2 cups sifted enriched flour
  • 2t baking powder
  • 1/4t salt
  • 1/3 cup butter or margarine
  • 1 egg, beaten
  • 1/3 cup milk
  • 3/4 cup sugar
  • 1/2 cup water
  • 2T butter or margarine

Instructions

Preheat oven to 375deg.

Place peaches in the bottom of a 2quart casserole dish. Sprinkle with lemon peel, juice, and tapioca. Sift together flour, baking powder, and salt. Cut in the butter until it forms coarse crumbs.

Combine egg and milk. Stir into flour mixture just until moustened. Spoon over top of the peaches.

Combine sugar, water, and 2T of butter and bring to aboil. Immediately pour over batter.

Bake 45 minutes at 375, or until crusty and browwned on top.
